A ruby red colour, it has a nose with a nuance of Amarena cherry, blackberry and cassis, as well as spicy hints of lavender and eucalyptus, finishing with a sensation of mint chocolate. It is silky and elegant on the palate, light but dense at the same time, characterised by sweet, ripe, tight textured and crisp tannins. The balance between its sweetness and full-bodied character makes it intriguing and its bright forceful acidity provides a long-lasting aftertaste of rhubarb and liquorice.
WINE-MAKING: The harvested grapes are carefully selected and de-stemmed and then pumped to vats without being crushed. Fermentation takes place using selected yeasts at the maximum temperature of 28°C. The extraction processes are carried out with cycles of delestage and pumping over. Maceration lasts 20 days. Malolactic fermentation takes place in a stainless steel tank; ageing lasts 12 months in French oak tonneaux and 6 months in 10hl Slavonian oak casks. The wine is then assembled, sulphur dioxide is added and then it is bottled without filtration.
