HARVEST
Harvested by hand during the last week of September for Canaiolo, and during the first ten days of October for Sangiovese.
VINIFICATION AND REFINEMENT
Fermentation of 10-15 days at controlled temperatures.
Malolactic fermentation in stainless steel tanks.
Followed by maturation in stainless steel vats, barriques and tonneaux for at least 3 months.
